Die 13 ha große Domaine in Verdigny wird seit bereits einigen Jahren von Stéphane Cherrier geführt, der Sohne des Gründers, Paul Cherrier. Mit Domaine Vacheron und Riffault, gehört Cherrier zu der neuen Generation in Sancerre, die komplett auf den Verzicht von Chemie, sowohl im Boden als in der vinifizierung setzt. Die Kalkreichen Böden, der gleichen Art wie man z.B. in Chablis findet, bringt eine sehr feine geradlinige Mineralität, Konzentration, Frische und Länge. Präzision ist hier das Schlagwort.

Der Sancerre 2021 von der Domaine Paul Cherrier ist ein exzellentes Beispiel für echte Terroir-Weine. Die Rebsorte Sauvignon Blanc (100%) ist klar erkennbar durch Ihre Zitrusfrucht- und Cassis-Anklänge. Etwas Minze und Maracuja entfalten sich, nachdem er etwas Luft bekommen hat. Aber der Wein ist mehr als ein beliebiger Sauvignon blanc. Er ist ein echter Sancerre. Mineralität strömt in die Nase, im Mund ist er frisch, lang und wieder durch seine Mineralität sehr raffiniert. Laute und pompöse Sauvignons gibt es viele, aber so klassisch und puristisch, fein und ausgewogen eher selten. Dieser Wein bereitet jetzt schon Freude, er wird sich aber über die nächsten 3 bis 4 Jahre noch entwickeln und verfeinern.
