Früher war Cahors der Wein der Könige. Man sprach vom schwarzen Wein aus Cahors. Er war aber damals extrem Gerbstoffbetont und sperrig. Die Rebsorte Malbec brachte hier so viel Kraft, dass man den Wein mindestens 10 Jahre weglegen musste bevor man ihn genießen konnte. Heute, ist die Farbe geblieben aber die Weine sind wesentlich feiner und sanfter geworden. Sie zählen immer noch zu den kräftigeren Weinen des Südwestens, besitzen aber viel mehr Finesse. Das Château Combel la Serre ist eines der Güter dieser Renaissance. Seit 1900 gehört das Gut der Familie Ilbert. die jetzigen Winzer Pierre und Julien (Vater und Sohn) haben 2013 den Schritt Richtung Biodynamik gewagt um den Boden besser sprechen zu lassen. Deren Weine sind ehrlich, herrlich und bodenständig mit aber einem Hauch Raffinesse und Charme. Einfach klasse zu trinken!

Diese Cuvée du Château besitzt eine klare Frucht mit Noten von dunklen Beeren, eine feine Mineralität und eine gute Länge. Der Wein ist ungemein saftig und der Abgang feinfruchtig. Ein moderner klassiker, den man unbedingt entdecken, beziehungsweise wieder entdecken sollte!
